DESCRIPTION

This unit is an integrated examination of principles and elements of food industry innovation and the food industry in Australia. Participants will be introduced to the elements of innovation, including an understanding of creativity, the application of innovation to the food industry at a enterprise level and its effect on commercialisation and entrepreneurship; food security and challenges to the food industry; regionalisation verus globalisation; snd innovation systems and their use for analysing the developing food region and hubs. Australian, Tasmanian and international case studies will be drawn upon to illustrate this theory, as well as case studies of innovative food businesses and entrepreneurs.

WEIGHT: 12.5%

ASSESSMENT:

Poster and Presentation 25%, Food Innovation case study 75%

TEACHING PATTERN:

3 day intensive, followed by 1 presentation day 4 weeks later.
